"Hi" is more formal than "hey" but less formal than "hello". It is used when meeting someone for the first time casually but usually not in formal situations like a business meeting or job interview.
"Hey" is the most casual. It is used between friends and family. It can also be used when meeting someone for the first time, like a blind date or meeting new people at a party, or similar situation.
Generally, if another person greets you first, you can use the same greeting. For example, if your boss says "Good morning", you probably shouldn't say "hello" in response. However, personally, if someone says "hello" to me, I usually respond with "hi" in casual situations.
